Help with legal issues with furniture maker

Last September we had a furniture maker make a table. We had to pay a deposit and the table would be delivered within an agreed number of weeks. Only weeks later (mid-December) the table was finally delivered after our insistence, and we paid the remaining amount. After just a few days the table started to wobble and the construction came loose. We had to chase the furniture maker for a while before he finally came by in February. The man could not solve the problems on the spot and took the table back. We did not hear from him for months, he promised to call back but did not, etc. In the end we put the furniture maker in default by email and considered the purchase not closed due to non-performance and asked for our money back. Someone else suddenly took over, the man turned out to have had a burn-out and they still wanted to deliver, so we gave him that chance. The table was delivered again at the end of May and had been adjusted here and there, but was still not sturdy enough. It still wobbled, connections came loose again immediately after delivery, etc. So again insufficient quality. The furniture maker acknowledged that the stability was still insufficient, and according to him, he had no further solution for it and did not know what to do. We put him in default again on the spot and then agreed that the full purchase price would be refunded. The seller then signed a note stating that the table was insufficiently stable and the money would be refunded. More than three months later, that still hasn't happened. Emails, letters and phone calls had no effect, until we tried again this week. Then the furniture maker comes up with the story that he owes us nothing, that we have deprived him of the opportunity to fix the table and that he only wants to pay back the purchase price minus the down payment in four monthly installments as compensation. What are we legally entitled to now and what is the best thing to do? Because our money has been parked there for almost a year and we have never received the agreed product. From the date of default, the selling party is liable for damages, in this case statutory interest on the amount to be reversed. Incidentally, that amount must be returned to you immediately and you the table. There is another alternative, namely you claim back part of the purchase price and for that part you have another furniture maker repair the table.
