Ir/Madam My 27 year old son wants to rent a house. This concerns temporary rental, but the landlord only wants to rent if there is a guarantee. This would be us as parents. Can the landlord just make this claim even if he is 27 years old? We are then responsible for the rent and additional costs if he does not pay.

The landlord is indeed allowed to stipulate this. Your son's age is irrelevant. For example, if your son didn't pay the rent, the landlord could hold you accountable. It's not unusual for landlords to ask for a deposit/guarantor. Especially with first-time buyers, landlords want assurances that they'll receive their payments. These are often the parents.
