it concerns a rental of a website and now the gentleman suddenly wants 577 euros because I said I would no longer use his services because he does not keep to the agreements made, he says that I have a 1-year contract, but during the battle on the phone there was never any poor talk about that because the gentleman himself had problems with a co-owner who did not transfer the money to him and then he already threw everything flat on me and I had to start over again, but it should not be the case that the customer should be the victim and then on top of that he sends an invoice on October 28 that goes to a collection agency on October 29 from which I receive a letter on November 1, can this all just happen?

The entire collection process is not legally valid. A reminder and/or notice of default must be issued beforehand. What is also important is whether there is a contract/agreement between you both. If this only consists of a verbal agreement (telephone) then it can be terminated immediately. If there is a contract/agreement then I would like to see it.
