My employer falls under the collective labor agreement for the carpentry industry, and I have a zero-hour contract. Now he says that with a 0-hour contract no vacation days are accrued over the hours worked. (I work an average of 25.5 hours per week) Is this correct? I am entitled to vacation, just like my colleagues with a permanent contract?

That is not correct. You also build up vacation hours with a 0-hour contract. Furthermore, if you structurally work a certain average number of hours for at least 3 months, there will be a legal presumption of the extent of the work. You can then claim work in the following month based on that average number of hours and, if you remain available for that work, also the associated salary.
