How can I cancel my kitchen contract?

I am not from Netherlands and recently relocated here for job. I ordered a kitched and signed a contract on Saturday and canceled the same night. When I was in the shop I was forced to sign contract saying prices will change etc etc and you have to decide now and sign. I asked whether I can cancel signed contract, whether it is binding and the shop person said no in Netherlands there is always 2 days cooling off period and you can cancel. Now I am afraid after reading online that the kitchen shops charge 30% if we cancel order. How can I save myself from any penalty?
